Bison meat healthier than beef

As bison are grass-fed, grass-fed bison meat is leaner than beef and still has a lot of protein, though grain-finishing does increase the fat content. And like all meat, it’s rich in protein, vitamin B12, iron, zinc and other nutrients like B6.

A buffalo jerky contains roughly about 2.42 g of fat while the same size of beef has 18.54 g .Of the total fat in beef, 46.3 percent of it is saturated fat whereas 43.4 percent of the total fat in a bison jerky is saturated fat. Bison meat also contains fewer calories than beef. So comparatively beef jerky is healthy.

Though bison and buffalo jerky make a good alternative for beef in most of the recipes, you must be pretty much careful while you prepare the dish. Because it is a leaner meat than beef, bison comparatively gets cooked quicker than beef. Also, if it’s cooked too long or at a high temperature than required the meat gets hard and a bit fibrous which makes it tough to chew?

For best results and compliments, burn a bison steak at a high temperature in a pan with  the required sliced vegetables, then reduce the flame until it is cooked to medium-rare to medium. Pulverised bison can be cooked until it has got just about pinkish in the centre, or until it has a temperature of 160 degrees Fahrenheit.

Meat of buffalo jerky though similar to Beef needs to be handled and cooked with little more care. Bison, as it is low in fat content, does not have this insulation and lining, and therefore does not need to be on flame for too long with as high a temperature to get the job done. Turning the temperature down by about 50 degrees, will make the in the same amount of time as beef would be. Bison meat, if cooked with correct technique and timing, tastes very much like beef, only tastier, healthier for you, tender, and it has a fuller comfortable flavour.
