Chef Toni’s Black Forest Bison Chili

In an extra large pot sauté garlic in oil for 2 to 3 minutes over high heat. Add celery, onions and ground Bison. Cook until Bison is browned, stirring often. Add spices and mix well. Add tomatoes, beans, chili’s and liquid. Heat to simmer. Pour in crock pot, keep hot until ready to serve.

2 lbs ground Bison
1 T Canola oil
1 T crushed garlic
1 c chopped celery
1 med onion, chopped
2 envelopes of your favorite chili spice
1 – 32 oz cans crushed tomatoes Mexican style or with jalapeno peppers
1 – 15 oz can dark red kidney beans
1 – 15 oz can small red beans
1 – 15 oz can small
1 – 2 oz can of diced green chilis
1 T Ground cumin
3 T fresh chopped cilantro
1 C water, red or white wine or chicken broth
